Baked Pineapple
2 eggs
1 cup sugar
1 teaspoon vanilla
1/4 cup water
2 tablespoons cornstarch
1 (20 ox) can crushed pineapple
butter
cinnamon


Preheat oven to 350 degrees F. Grease baking dish thoroughly with butter. Beat eggs. Dissolve cornstarch in the water first to prevent lumps. Add sugar, vanilla. Blend thoroughly. Add pineapple. Stir to blend. Pour into greased dish. Dot with butter and sprinkle with cinnamon. Bake 1 hour.
